Seattle Food Safety Consultant
HACCP, Preventive Controls, and SQF programs for Seattle's roasters, seafood processors, and natural food brands.
Seattle taught the country how to drink coffee and never stopped shipping the Pacific to the rest of the world. Roasters in Ballard and Georgetown, seafood processors near Fisherman's Terminal, and a whole generation of natural and better-for-you brands share a city built on quality and provenance, and every one of them still has to satisfy an inspector and a buyer. In Washington, even roasting a coffee bean is licensed food processing. We do the hands-on work of building or upgrading your food safety plans, prerequisite programs, and traceability, then rehearse the audit so nothing surprises you. We build it with your team, not as a course you finish alone.

A city that made its name on coffee, salmon, and clean labels
Seattle's food economy is unusually identity-driven. This is the birthplace of American specialty coffee, a working seafood port that processes salmon, crab, and groundfish for the whole country, and a hotbed of natural, organic, and better-for-you brands that treat ingredient sourcing as a selling point. Around them sit the co-packers of Kent and Tukwila, the beverage and kombucha makers, and the bakeries and prepared-food producers of SoDo and Georgetown. It is a market where provenance and quality are the brand, which raises rather than lowers the food safety bar. We build programs that protect that reputation and clear the audit behind it.
Roasting and seafood, the trades that define the city's plants
Coffee and seafood are Seattle to the world, and both are licensed, hazard-bearing food processing under Washington law. We build for the specifics of each.

Coffee and beverage
Roasting coffee is a licensed food process in Washington, and modern roasters increasingly branch into RTD coffee, cold brew, and flavored and nitro products that raise the stakes.
- Food Processor licensing and GMPs for roasting operations
- Acidified and low-acid controls for RTD and cold brew
- Process filings and validation for canned and bottled drinks
- Allergen and flavor-handling controls, plus water and sanitation

Pacific Northwest seafood
Salmon, crab, and groundfish are minimally processed and often smoked or cold-held, so pathogen control is everything, and Washington requires a written seafood HACCP plan to license each product.
- Seafood HACCP under 21 CFR 123 for each fishery product
- Smoked-fish and Listeria controls with validation
- Histamine, cold-chain, and time and temperature control
- Traceability from vessel and supplier through pack
Natural and better-for-you brands still need the science underneath
Seattle and the wider Northwest are a launchpad for organic, plant-based, functional, and clean-label brands. Minimal processing and short ingredient lists are great marketing, but they often remove the very hurdles that keep a product safe, so the food safety program has to work harder, not less.
Fewer preservatives, more risk
Clean-label formulas drop preservatives and additives, which raises shelf-life, water activity, and pathogen questions we control by design.
Claims that must hold up
Organic, non-GMO, and allergen-free claims need supplier verification and documentation that survives an audit and a label challenge.
Retail-ready from the start
Grocery and club buyers in this market expect SQF or GFSI readiness early, so we build the program to scale with the brand.
In Washington, if you transform food, you need a processor license
Washington regulates food manufacturing through the WSDA Food Safety Program, and its definition of processing is broad. These are the pieces that most often apply to a Seattle operation.
Food Processor License - WSDA FOOD SAFETY PROGRAM
If you cook, bake, freeze, slice, dehydrate, smoke, roast coffee beans, bottle water, or repackage food for wholesale, you need a WSDA Food Processor License, issued after an on-site inspection scored against a substantial-compliance standard.
Seafood and juice - HACCP WSDA / FDA, 21 CFR 123 AND 120
To license fish and fishery products, you must submit a written HACCP plan for each product type, with qualified HACCP training on file. Juice carries its own HACCP requirement.
Food Storage Warehouse License - WSDA
Holding food for wholesale distribution requires a separate Food Storage Warehouse License, which often applies alongside manufacturing for operations that also warehouse.
Acidified and canned foods - WSDA / FDA
Acidified and low-acid canned foods, including many RTD beverages and sauces, need a filed process, a process authority, and FDA LACF or acidified registration.
Retail, shellfish, and specialty - WA DOH / LOCAL HEALTH / WSLCB
Retail and food service fall under the Department of Health and local health jurisdictions, shellfish carries its own certification, and cannabis-infused edibles are shared between WSDA and the Liquor and Cannabis Board.

Seattle food safety consulting, answered
Does a coffee roaster really need a food processor license?
Yes. In Washington, roasting coffee beans is a licensed food process, so a roaster needs a WSDA Food Processor License, GMPs, and a food safety program, and any move into RTD coffee or cold brew can add acidified or process-filing requirements. We build the program to match your roasting and beverage lines.
We process salmon and other seafood. What is required?
To license fish and fishery products in Washington, you need a written seafood HACCP plan for each product type, with qualified HACCP training on file. Smoked and RTE seafood also need Listeria controls and environmental monitoring, plus cold-chain and histamine controls. We build all of it.
We are a clean-label or natural brand. Does that change our program?
It can make it more demanding. Removing preservatives and additives raises shelf-life and pathogen questions, and organic or allergen-free claims need supplier verification and documentation. We design the controls and evidence so your clean label holds up to an audit and a label challenge.
Who licenses food manufacturers in Washington?
The WSDA Food Safety Program licenses and inspects food processors and warehouses, scoring inspections against a substantial-compliance standard. Retail and food service fall under the Department of Health and local health jurisdictions, and interstate sales bring FDA jurisdiction.
Can you prepare us for SQF, BRCGS, or other GFSI audits?
Yes. We prepare facilities for SQF, BRCGS, and FSSC 22000, plus HACCP, FSMA Preventive Controls, GMP and cGMP, and USDA documentation. We run gap assessments, build documentation, run mock audits, and coach staff. We do not provide certification training.
How do Washington inspections work?
WSDA inspections are risk-based and, after the initial licensing inspection, unannounced. A firm reaches substantial compliance by scoring well with no critical violations, and any violations come with a Notice of Correction and a 30-day window. We help you build systems that hold up between visits.
