Las Vegas Food Safety Consultant
HACCP, Preventive Controls, and SQF programs for the producers and co-packers who supply the Strip.
Las Vegas feeds one of the most demanding hospitality markets on earth. The resorts, casinos, and convention halls that define the city buy from a dense network of ready-to-eat producers, beverage co-packers, bakeries, and distributors, and their corporate food safety teams audit hard before a single case ships. Add a desert climate that punishes any weak link in the cold chain, and a Nevada regulatory system that just changed hands, and the bar is high. We do the hands-on work of building or upgrading your food safety plans, prerequisite programs, and traceability, then rehearse the audit so nothing surprises you. We build it with your team, not as a course you finish alone.
Behind the buffets and banquets, a supplier base under constant audit
Las Vegas is less a farm-to-table town than a supply-the-resort town. The real food manufacturing story here is the producers and co-packers who keep the Strip stocked: ready-to-eat and prepared foods, sauces and dressings, baked goods, bottled and canned beverages, and the distributors that move it all through Clark County. Selling into casinos, hotel groups, and national foodservice accounts means clearing not just state inspection but the corporate and third-party audits those buyers require, often to a GFSI standard. We build programs that satisfy both, so a supplier relationship never stalls on a food safety gap.
The buyer sets the bar here, and it sits above the health permit
In most cities the inspector is the toughest audience. In Las Vegas it is often the buyer. Casino groups, hotel brands, and big-box accounts run their own food safety expectations, and meeting them is what wins and keeps the contract.
Corporate food safety teams
Resort and hospitality groups send their own auditors and specifications. We build the documented program and evidence they expect to see.
Third-party and GFSI audits
Many buyers require SQF, BRCGS, or FSSC 22000 certification. We run the gap assessment, build the system, and rehearse the audit.
National retail and foodservice
Accounts like big-box retail and national distributors demand supplier approval, traceability, and recall readiness before onboarding.
Two supplier profiles, each with its own path to audit-ready
Las Vegas suppliers tend to fall into two camps, and we tailor the work to each rather than reaching for a single template.

READY-TO-EAT AND PREPARED FOODS
RTE, sauces, and prepared items for resort kitchens
Ready-to-eat and prepared products carry the highest stakes, since there is no downstream kill step before they reach a guest. Pathogen control and sanitation decide everything.
- Listeria environmental monitoring and zoning in RTE areas
- Cook, cool, and hot-hold validation for prepared foods
- Acidified filings for sauces, dressings, and marinades
- Allergen control across shared, high-mix lines

BEVERAGE, BAKERY, AND DISTRIBUTION
Co-packed drinks, baked goods, and the cold chain
Beverage co-packers, bakeries, and distributors face shelf-life, process-filing, and traceability demands, plus the logistics of moving product safely across the valley in extreme heat.
- Beverage process controls and juice HACCP under 21 CFR 120
- Shelf-life, water activity, and preservation controls
- Supplier approval and incoming ingredient verification
- Lot-level traceability and FSMA 204 readiness
Nevada's food oversight just moved, so know who holds your permit now
Food manufacturing in Nevada runs under NRS and NAC 446, and the state recently reorganized who administers it. These are the pieces that most often apply to a Las Vegas operation.
Food establishment permit - NRS / NAC 446
Manufacturing, processing, or packing food in Nevada requires a food establishment permit, issued after plan review and a pre-opening inspection, with a risk category assigned to your process that drives how often you are inspected.
Clark County inspection - SOUTHERN NEVADA HEALTH DISTRICT
In the Las Vegas area, the Southern Nevada Health District handles plan review, permitting, and periodic inspection of food establishments, with inspection frequency tied to your assigned risk category.
Meat, poultry, and slaughter - NEVADA DEPT OF AGRICULTURE
Meat and poultry processing, wholesale meat, and slaughter are regulated by the Nevada Department of Agriculture under NRS 583, separate from the general food permit, with interstate meat under USDA-FSIS.
Acidified and canned foods - FDA / STATE
Acidified and low-acid canned foods, common in Las Vegas sauce and beverage production, need a filed process and a recognized process authority, plus the associated controls.
Federal overlay - FDA / FSMA
Interstate sales bring FDA Preventive Controls under 21 CFR 117, seafood and juice HACCP under Parts 123 and 120, and, for covered foods, FSMA 204 traceability.
Right-sized programs for how the valley supplies food
Ready-to-eat and prepared foods

What food and beverage teams say about working with us
"The people at FoodReady are excellent to work with and care to get involved with your company and make it as best as it can be. FoodReady staff also helped provide training to our QA team."
"All of our QC, from operators to mixers to maintenance to logistics use the FoodReady mobile app. The majority of our staff use the Spanish version. They have told me that it’s as simple as any other app they have on their phones. The app is very user-friendly and easy to navigate, even for the most technology-averse. It was a little bit of a struggle at first adapting to new ways of doing things but now, especially with the Spanish version available, it’s almost second nature."
"Having everything I need to access at my fingertips. Gone are the days of searching file after file for one particular document or form. During an audit, I don’t need to bring over binder after binder of paper files. Anything the auditor may ask for is right in the system, either on mobile or through the website. It’s a breeze. Not to mention you don’t need to clean up those binders and file things away again after!"
"The traceability FoodReady provided with recording, tracking and searching historical data was excellent to aid in our SQF goal."
Las Vegas food safety consulting, answered
We supply casinos and resorts. What do their buyers expect?
Beyond a state permit, resort and hospitality groups usually require a documented HACCP or preventive controls program, supplier approval, traceability, recall readiness, and often a GFSI certification like SQF or BRCGS. We build the program and the evidence package that clears their corporate and third-party audits.
How do you handle the desert heat and cold chain?
We treat temperature as a primary hazard. That means validated cold-chain controls, monitoring and alerting at docks and in transit, and corrective actions built for summer conditions, so a hot loading bay or a delayed delivery does not become a food safety failure.
We are a beverage or sauce co-packer. What applies to us?
Beverage and sauce production often involves juice HACCP under 21 CFR 120 or acidified food rules that require a filed process and a recognized process authority. We build those filings and the surrounding process controls, plus the supplier and traceability programs your buyers want.
Who permits and inspects food manufacturers in Las Vegas?
Food manufacturing runs under Nevada's NRS and NAC 446, with the Southern Nevada Health District handling plan review, permitting, and inspection in Clark County. Under Senate Bill 466, effective July 2025, the Nevada Department of Agriculture now holds overall food establishment regulatory authority. Meat and poultry are regulated by the Department of Agriculture, and interstate sales bring FDA.
Can you prepare us for SQF, BRCGS, or other GFSI audits?
Yes. We prepare facilities for SQF, BRCGS, and FSSC 22000, plus HACCP, FSMA Preventive Controls, GMP and cGMP, and USDA documentation. We run gap assessments, build documentation, run mock audits, and coach staff. We do not provide certification training.
How fast can we be audit ready?
It depends on your starting point and the standard. Many Las Vegas suppliers reach readiness within weeks to a few months of the assessment. We build a roadmap around your buyer or certification date and tackle the highest-impact items first.
