San San Tofu has spent more than two decades building a distinctive place in Houston's vegetarian food community. Led by Kimberly Tran, the business combines tofu production, vegetarian prepared foods, a restaurant, and a specialty grocery operation under one roof. Its extensive selection has grown to include tofu products, Vietnamese and Cantonese-inspired vegetarian dishes, dim sum, ready-to-eat foods, snacks, and plant-based alternatives.
But the diversity that made San San Tofu unique also made food safety management more complex. The company needed a structured way to document and monitor its tofu-making process while managing batches, receiving ingredients and supplies, executing SOPs, completing routine checklists, and monitoring its production environment. Rather than manage each responsibility through a separate process, San San Tofu wanted an all-in-one food safety system.

Making tofu was only one part of the operation. Monitoring everything around it was the real challenge.
San San Tofu is more than a tofu manufacturer. Its Houston operation brings together food production, prepared vegetarian meals, grocery products, and retail service within a single business. That creates multiple food safety responsibilities.
Raw materials and supplies have to be received and monitored. Production batches must be documented. Employees need procedures they can consistently follow. Routine checks have to be completed. Environmental conditions must be monitored. And the resulting records need to stay organized and accessible. For San San Tofu, the challenge was not simply creating another HACCP document. Understanding the Tofu-Making Process
FoodReady first worked around the requirements of San San Tofu's actual production environment. Tofu manufacturing involves a sequence of receiving, processing, handling, monitoring, sanitation, and storage activities that must be properly controlled and documented. The objective was to build a food safety program around how San San Tofu operated rather than forcing the business into generic documentation.
HACCP Plan Development
FoodReady developed the HACCP plan San San Tofu needed for its operation and State of Texas compliance requirements. The plan provided the structure for identifying food safety hazards, establishing appropriate controls, documenting monitoring activities, and defining how employees should respond when required conditions were not met. Bringing this information into the same system as HACCP activities, batches, checklists, and receiving made the overall food safety program easier to manage.
Staff Training & Implementation
Developing the documentation was only part of the project. Employees also needed to understand how to use the software and incorporate the required food safety activities into normal operations. FoodReady trained the San San Tofu team on the system.
