Gabriel’s Bakery is a family-owned and operated wholesale bakery in Portland, Oregon, specializing in artisan bagels, breads, and pastries. The bakery’s story began with founder and master baker Amilcar Alvarez, who moved from Peru to Portland in 1979. After working in a small French bakery, he developed a baking style influenced by his Peruvian background, French training, and his wife’s Jewish heritage.
In 1987, Amilcar founded Gabriel’s Bakery and named it after his newborn son. Over the years, the business grew into a multigenerational bakery, with his sons Gabriel and Sandro joining the company and helping carry the family tradition forward.
Today, Gabriel’s Bakery supplies breads, bagels, muffins, scones, and pastries through wholesale and retail channels, with products available through major regional retailers and local partners.
As the bakery expanded, maintaining food safety requirements became more demanding. Gabriel’s Bakery needed to prepare for a Good Manufacturing Practices (GMP) audit, which required a stronger HACCP program, formalized checklists, and consistent employee records.
